Five Ways to Spice Up Your Trip Menu
Wholesum Team
·

Before the season starts is the right time to step back and ask what small changes would make your food land harder with clients. These five work whether you run a high-end operation or a lean, convenience-first one.
1. Give your recipe list a makeover
Familiar menus eventually fall flat. Start with the Wholesum Cookbooks, curated collections built with working outfitters and free to browse. For backcountry kitchen know-how, Chef Corso at MontyBoca is worth following. Fresh Off the Grid is aimed at car campers, which makes its recipes a good fit for trips with coolers and fresh ingredients.
2. Small additions, big flavor
Chef Corso’s advice boils down to three things most field kitchens under-use. Acid: a squeeze of lemon or lime, or a splash of vinegar, is often the missing element in a flat dish. Spice mixes: Mexican, Indian, Thai, and Cajun blends, premade or your own. Sauces: chimichurri, salsa, BBQ, a simple gravy. One finishing sauce turns a basic protein into a dish people remember.
3. The dutch oven is king
When weight is not the constraint (rafting, car camping, horse packing), nothing beats a dutch oven for morale. Cobblers, enchiladas, fresh bread. Build one dutch oven dinner into every trip.
4. Plating and presentation
People remember a meal by its smell, texture, company, setting, and how it looked. You do not need elaborate garnishes. Sliced red pepper, a handful of cilantro, a sprinkle of cotija or toasted seeds takes ten seconds and changes the whole plate.
5. Restrictions should not restrict the experience
We once watched a vegetarian on a rafting trip get a bowl of plain white rice while everyone else got steak. That guest will not be back. Keep a few genuinely good vegetarian and gluten-free dishes in rotation so the guest who cannot eat the main course still gets something worth photographing.
